Dialogue Chardonnay 

Ageing and evolving into the bottle.

 

  1. Description

    Cool climate modern expression of Chardonnay. Quality dry white wine, 100% Chardonnay variety.

  2. Origin

    Grown in the highlands of northern Peloponnese. The high altitude (950 m) along with the NW exposure ensure high diurnal temperature variations, mitigate hot summer days and advance the effect of cold nights. The long grape hanging period extends to over 130 days. Organic farming grapes are hand-picked at targeted high ripeness levels. Controlled yield (40 hl/ha) improves quality.

  3. Vinification

    De-stemmed grapes undergo a pre-fermentative extraction at low temperatures, light pressing juice is cold-settled prior to fermentation. Inoculation with selected yeast strains ferment must sugars to 2,2 gr/lt RS. Fermentation is followed by fine lees contact for 7 months with occasional lees stirring. Partly aged in old oak barrels.

  5. Tasting Note

    Pale yellow with green tints in the rim. Explosive guava and passion fruit forward taste in a beautiful tropical fruit bouquet, citrus peel along with zesty flavors on a balanced and complex fruit palate with a long lasting finish.

Gris-De-noir-bottle160

Dialogue Gris de Noir 

Fresh red fruit aromas of pomegranate, cherry and redcurrant. Α deliciously refreshing palate, with savory bell and black pepper and a lovely rolling mouth-feel. A truly elegant flavor profile.

 

  1. Description

    Modern expression of rosé style wine. Quality dry rosé wine, made from Cabernet Sauvignon (85%) and Agiorgitiko (15%), having the character of a red wine and the crispness of a white.

  2. Origin

    Cabernet Sauvignon grows in Atalanti, Central Greece. Canopy management techniques control yields (35 hl/ha). Early picking of grapes at targeted alcohol level. Cabernet Sauvignon vineyards’ soil is gravely and loamy.

  3. Vinification

    De-stemmed grapes undergo a very short pre-fermentative extraction at low temperatures by keeping the skins in contact with the juice for only a very brief time and then the pink-tinted juice is drained off from the skins. Inoculation with selected yeast strains ferment must sugars to the end.

  5. Tasting Note

    Pale onion-pink with salmon tints on the rim. Fresh red fruit forward nose of pomegranate, cherry and redcurrant. The palate has a delicious freshness, savory bell pepper, black pepper along with cherry and a lovely rolling mouth-feel cut by the citrus fresh acidity. A really elegant flavor profile.

Dialogue Merlot 

Enjoy expressive red and black fruits along with earthy and spicy notes on a balanced palate. Silky tannins and fine quality fruits lingering to a savory finish.

 

  1. Description

    Quality red dry wine, 100% Merlot variety, from Thessaly, Greece.

  2. Origin

    Grown in Nesson-Larissa, Thessaly. Precise viticulture and canopy management techniques used in order to secure fruit quality and promote fruit expression in the end wine. Grown on poor sandy and clay soils. Strictly controlled yield at 30 hl/ha and light irrigation at the late ripening stages ensure palate complexity and expressiveness.

  3. Vinification

    De-stemmed grapes undergo pre-fermentative extraction at low temperatures; inoculation with selected yeast cultures ferment must sugars to the end under strict temperature control. Extraction extends to around 2 weeks dictated each year from vintage characteristics. Spent 16 months in French oak with occasional lees stirring. French multi capacity oak barrels are constituted of two thirds of new and the rest of 2nd and 3rd use barrels with medium and medium plus toasting.

  5. Tasting Note

    Medium garnet with purple tints on the rim. Concentrated fruity nose along with spicy and choco notes. Expressive black fruits, delicate spices and leathery notes on a balanced palate. Soft rich tannic structure integrates well the French oak prolonging a savory long finish.
